Happy New Year! It’s time for everybody and their brother to jump on board the “exercise and eat better” bandwagon, right? Right! Well, as cliche as it may seem, I’m jumping into another round of the 21 Day Fix today. Quite honestly, not a lot of it has to do with the fact that it’s January 1…I’ve been needing to (and wanting to) get back into a better regimen of exercise and eating well, but there have been some things in life lately that have kept that from happening. I put it off repeatedly – for good reason, actually – and now it seems like the reason I was putting it off may be the reason I shouldn’t have been putting it off. Ha! That’s clear as mud, I know. Bottom line is, I need a reset on my eating and exercise habits, and 21 Day Fix is a great way to do that!
First things first…what is the 21 Day Fix? I first tried this program two summers ago and saw amazing results. I lost 8 pounds and 7 inches over the first 3 weeks, for a total of 15 pounds and 17 inches over the first 2 months. It’s not so much a “diet program” as it is a lifestyle re-set. I wrote all about my 21 Day Fix Journey here. (No, I’m not a Beachbody coach, and no, I’m not trying to sell you anything. It’s just my honest take on what the experience was like.)
But in any case, as I was looking up new recipes and putting together my meal plan, I found some really amazing looking 21 Day Fix Instant Pot recipes that I really wanted to try…and I thought they were worth sharing with you! So if you’re jumping into a round of 21 Day Fix, or just looking for some healthy recipes, here’s a great collection of pressure cooker recipes to try. I’ve included the container counts for each recipe for your convenience as you are working on your meal plan.
I love my electric pressure cooker (most people have an Instant Pot, but this is the electric pressure cooker I have), though I’m not as raving mad about it as some people. It works really well for things like soups, stews, and chilis, and makes a terrific pot roast. It’s good for shredded chicken and beef, too. It’s not nearly as fast as people make it out to be, though – the cook time for a pressure cooker is faster than a stove top, but that doesn’t include the time it takes to come to pressure (about 10-15 minutes) plus the time it takes to release the pressure after it’s done (another 5-15 minutes depending on whether you do quick release or natural release). Don’t forget to account for that in your meal prep time. I do think it is a handy appliance to have, so if you have the funds and the storage space for it, I’d recommend it!
In any case, I’m looking forward to adding some of these 21 Day Fix Instant Pot recipes to my meal plan this time around. I’ll try to remember to come back and update this post as I try out these recipes. And if you try them, leave a comment and let me know what you think!
